Choosing the Right Cut of Beef

The best stir fry starts with the right type of beef. You want something tender that cooks quickly over high heat.

  • Flank steak
  • Sirloin

The most important trick is slicing against the grain. This shortens the muscle fibers and keeps the beef tender instead of chewy.

The Ingredients You need

  • 450g beef (thinly sliced)
  • 1 medium onion (sliced)
  • 1–2 bell peppers (sliced)
  • A small bunch of green onions
  • 2 tbsp dark soy sauce
  • Black pepper
  • 1 tbsp oyster sauce
  • 1–2 tbsp sugar (adjust to taste)
  • 2 tbsp flour
  • ¼ cup water
  • 2 tbsp oil (for frying)

  • Beef: Use a tender cut if possible (like sirloin or flank), and slice thinly against the grain for the best texture.
  • Dark soy sauce: This gives the stir fry its deep colour and rich flavour.
  • Oyster sauce: Adds that umami depth that makes everything taste better.
  • Sugar: Balances the saltiness- don’t skip it.
  • Flour: Helps thicken the sauce into that glossy, clingy coating.

How To Make Beef Stir Fry

  • Start by prepping everything before you turn on the heat because stir-fry moves fast. Slice your beef thinly and set it aside. Cut your onions and bell peppers into strips.
  • Marinate your beef in black pepper, half of the soy sauce and flour for 5-10 minutes.

    • In a small bowl, mix together the dark soy sauce, oyster sauce, sugar, 1 tablespoon of flour, and water. Stir well until smooth and set aside.
    • Heat oil in a pan or wok over medium-high heat. Once hot, add chopped garlic and the beef in a single layer. Let it sear without moving it too much so it gets some color.
    • Cook for a few minutes until browned, then remove from the pan and set aside.
    • In the same pan, add a little more oil if needed, then toss in the onions and bell peppers.
    • Stir fry for 2 to 3 minutes until slightly softened but still with a bit of crunch.
    • Return the beef to the pan, then pour in your sauce mixture.
    • Then add chopped spring onion
    • Stir everything together and let it cook for a few minutes until the sauce thickens and coats the beef and vegetables beautifully.
    • Taste and adjust if needed- more sugar if you want it sweeter, or a splash more soy if you want it saltier.

      Take it off the heat and serve immediately.
