Tomato rice is a simple, flavourful rice dish made with ripe tomatoes, onions, pepper, and a few everyday seasonings. The tomatoes cook down into a rich sauce that coats every grain of rice, giving the finished dish its beautiful colour and fresh, savoury flavour. It is an easy way to turn basic pantry ingredients into a satisfying meal without spending hours in the kitchen.
One of the best things about homemade tomato rice is how easy it is to customise. You can keep it simple and serve it as a side dish, or add chicken, beef, fish, or vegetables to make it a complete meal. It is also a great option when you want something different from plain white rice but do not feel like making a more elaborate rice dish.
In this recipe, we will cook the rice directly in a freshly prepared tomato sauce so that it absorbs the flavour as it softens. The result is tender, colourful rice with a delicious tomato base in every bite.
Ingredients for Tomato Rice

You only need a handful of everyday ingredients to make this tomato rice recipe. Fresh tomatoes provide the main flavour, while onions, pepper, and seasonings help create a well-rounded sauce.
- Cooked White Rice: Long-grain rice works well because the grains hold their shape during cooking. You can also use another variety, but you may need to adjust the cooking time. For this recipe, you can use freshly cooked al dente rice. But I like to use cooked day-old rice.
- Fresh tomatoes: Use ripe tomatoes for a naturally sweet, tangy flavour and a rich red colour.
- Onion: Onion gives the sauce a savoury base and helps balance the acidity of the tomatoes.
- Garlic: A little garlic adds extra flavour to the sauce.
- Vegetable oil: This helps fry the tomato mixture and brings the flavours together.
- Salt: Add salt to taste.
- Seasoning Cube: Adds flavour
- Dried thyme: This complements the tomatoes and gives the dish a savoury aroma.
- Ginger: Optional but I love the burst of flavours.
How to Make Tomato Rice
1. Chop the tomatoes and other ingredients
Roughly chop your tomatoes and other ingredients. I like to do a VERY rough chop as I like the texture it gives. Fell free to blend if you want. If your tomatoes are particularly watery, you may need to cook the sauce for a little longer to remove the excess moisture.

2. Fry the tomato sauce
Heat the vegetable oil in a medium-sized pot over medium heat. Add the chopped onion, tomatoes, garlic and ginger to a pan and cook for about 7-10 minutes or until cooked down and reduced

3. Season the sauce
Add the dried thyme, chilli, and salt. Stir everything together and taste the sauce. Adjust the seasoning if necessary, keeping in mind that the rice will absorb the flavour as it cooks.

4. Add the rice
Add the rice to the tomato sauce and stir until the grains are evenly coated. Fry the mixture over low heat. Check the rice occasionally to make sure it is not sticking to the bottom.

5. Fluff and serve
Once the rice is tender, turn off the heat and let it rest, covered, for about 5 minutes. Fluff the rice gently with a fork to separate the grains and distribute the tomato sauce evenly.

Serve your tomato rice warm with your favourite protein or vegetables.
Tips for Making the Best Tomato Rice
Use ripe tomatoes. Ripe tomatoes have a better balance of sweetness and acidity, which makes the finished rice more flavourful.
Cook the tomato sauce properly. Do not rush the frying stage. Allowing the blended tomatoes to reduce helps concentrate their flavour and prevents the finished dish from tasting watery.
Keep the heat low after adding the rice. Gentle cooking allows the grains to soften evenly without burning the sauce at the bottom of the pot.
Let the rice rest before serving. A few minutes of resting helps the remaining steam finish cooking the grains and makes the rice easier to fluff.
What to Serve with Tomato Rice
Tomato rice pairs well with many different dishes, so you can serve it according to what you have available.
- Grilled chicken: The savoury flavour of grilled chicken complements the slightly tangy tomato rice.
- Fried fish: Serve the rice with fried tilapia, mackerel, or another fish you enjoy.
- Beef stew: A rich beef stew makes the meal hearty and satisfying.
- Fried plantain: Sweet, golden plantain balances the savoury tomato flavour beautifully.
- Steamed vegetables: Carrots, green beans, peas, and sweetcorn add colour and texture.
- Fried eggs: For a quick and affordable meal, serve the rice with fried or boiled eggs.
You can also stir cooked chicken, minced beef, or mixed vegetables directly into the rice during the final stages of cooking.
How to Store Leftover Tomato Rice
Allow leftover rice to cool slightly, then transfer it to a shallow, airtight container and refrigerate it promptly, ideally within one hour. Keep it refrigerated at 5°C or below and use it within 24 hours as a cautious food-safety guideline for cooked rice.
To reheat, add a small splash of water, cover, and heat until steaming hot throughout. Only reheat the portion you intend to eat, and avoid reheating the same rice multiple times. You can also freeze the rice in individual portions and reheat it thoroughly from frozen or after thawing safely in the refrigerator.
Frequently Asked Questions
Can I use canned tomatoes?
Yes. Canned chopped or crushed tomatoes are convenient substitutes for fresh tomatoes. Since canned tomatoes can vary in moisture and acidity, allow the sauce to reduce before adding the rice and adjust the seasoning to taste.
Why is my tomato rice mushy?
Tomato rice can become mushy if you add liquid, use a rice variety that releases a lot of starch, or stir the rice too frequently while it cooks. Rinse the rice before cooking, measure the liquid carefully, and keep the heat low.
Can I make tomato rice spicy?
Absolutely. Chop fresh chilli pepper with the tomatoes or add your preferred chilli seasoning to the sauce. Start with a small amount and adjust the heat to your taste.
Is tomato rice the same as Nigerian jollof rice or mexican rice?
They are similar in that both can use tomatoes, onions, and rice cooked together in a seasoned sauce. However, tomato rice is a broad category with many variations, while Nigerian jollof rice and Mexican rice have distinct preparations, seasoning combinations, and flavour profiles. Some tomato rice recipes are deliberately kept simpler than traditional Nigerian jollof.
